Our cuisine is influenced by the rich gastronomic traditions of the tri-border region—Brazil, Peru, and Colombia—especially by fishing and the ingredients harvested from the wetlands by indigenous and riverside communities. Staples such as cherós, yuca, plantain, and exotic fruits play a key role, along with traditional indigenous gastronomy.

One of the signature dishes is patarasca, where fish fillets (such as dorado and pintado) are wrapped in banana leaves and grilled. This is accompanied by traditional cassava-based casabe or the “jungle flour,” a staple of the Amazonian diet.

Other highlights include river fish ceviche, charapa rice, and fariña, a Brazilian-style cassava flour commonly used in Amazonian cuisine. To complement the experience, we offer refreshing juices made from the region’s exotic fruits.
